Simple Squash soup (easy and delish)

1 butternut squash (cut into small chunks)

1 onion (cut into medium chunks)

1 branch rosemary (diced)

7 cups chicken broth

Olive oil or Coconut oil

Instructions

  1. Chop all ingredients and place them in a pot. I added extra salt and pepper to taste.

  2. Bring ingredients to a boil. Boil for approximately 20 min or until squash is soft for blending.

  3. Place ingredients in a blender and blend until smooth.

  4. Return to pot and boil for approximately 5 min to thicken.

  5. Cool and serve. Top with a small dollop (~1 teaspoon) of coconut oil or olive oil.
